Southwest Quinoa Chicken and Corn Chili….AMAZING!!!

Last night I came up with a recipe for what I am going to call a Southwest Quinoa Chicken and Corn Chili…and it was AMAZING!!! My husband and kids just ate it up like it was dessert! The funny thing is that the whole time it was cooking my husband kept saying “I am scared” (because he has never had quinoa before) but is seriously turned out great!!!

Southwest Quinoa Chicken and Corn Chili

Ingredients

  • 1 1/2 cup of quinoa, rinsed
  • (3) cans Diced/Crushed/Italian tomatoes (I used 1 can diced and 1 can Italian tomatoes, 1 can crushed…you can do any combination you would like)
  • (1) can Rotel diced tomatoes with green chilies
  • (2) cans of black beans, rinsed, drained (we are not a bean family…so I only used 1 can…but it easily could have used 1 more can)
  • (1) 15 oz can of corn, drained (we love corn…so we used 2 cans here)
  • 1/2 onion, diced
  • 4 cloves garlic, minced
  • (2) cans or 3 cups chicken stock
  • 2 large chicken breasts (bones thighs work too) frozen or thawed (cook longer if frozen)
  • 1 tsp garlic powder
  • 2 tsp cumin (I left this out last night…but think it would enhance the flavor)
  • 1 tsp crushed red pepper (don’t worry this won’t make it spicy…just adds flavor)
  • 2 tsp chili powder

Directions

  1. This is the best part…so easy…just throw everything into the  crock pot  and cook for 7-8 hours on low or 5-7 hours on high. If you used frozen chicken add about an hour…mainly cook until the chicken is cooked all the way through)
  2. Run a fork through the crock pot and feel for the chicken…if it is not broken up already…just break it apart (or you can remove it from the slow cooker….shred it with two forks and return it) I found that my chicken cooked so tender that I just had to run a fork through and it broke apart with no effort!
  3. Serve in individual bowls…topped with cheese, sour cream, avocados…whatever you like!!! (My hubby added a jalapeno at this point)

Bring that Leather back to life…DIY Leather Cleaner!!!

So we have these red leather theater chairs in our “family room” and well as luck would have it right after we got these cool chairs we got 2 very adorable kittens. Needless to say those kittens have put some little shallow scratches on the leather…and my kids have done their duty of making them a bit dirty themselves.

I really haven’t ever seen coupons for leather cleaner or conditioner and that stuff and be kind of spendy…so I looked up different recipes and ingredients for “Do IT Yourself” recipes….viola…I have clean…scratch free leather chairs again!!!

Leather Cleaner

1 cup olive oil

2 cups white vinegar

10 drops of essential oils (I used orange!)

                                  ***I am now headed to my cars to clean my car seats…so excited!!!

The most amazing soup in the world! Zuppa Toscana (just like the one at Olive Garden…but better)

Zuppa Toscana Soup

Ingredients

1 pound Italian sausage
1/2 teaspoon red pepper flakes
1 large white onion, diced
3 large Russet potatoes, peeled and chopped
4 slices bacon chopped
3 cloves garlic, minced
8 cups chicken broth
2 cups Water
1 cup Heavy cream
3 cups Kale, washed and roughly chopped
Salt and pepper, to taste
Parmigiano Cheese

Directions

1. In a medium skillet, saute the Italian sausage with the red pepper flakes. (If you want your soup to be more spicy use “hot” Italian Sausage and add 1 1/2 tsp of red pepper flakes)

2. In a large pot, saute the bacon. When the bacon is half way cooked, add the onions and garlic. Saute until the onions are tender (about 5 minutes).

3. Add the chicken broth and water and bring to a boil.

4. Add the potatoes and cook until soft, about 10 minutes.

5. Add in the heavy cream and sausage and cook until the soup is heated.

6. Stir in the chopped kale. Season with salt and pepper. Serve hot.

7. Grate some fresh parmigiano cheese atop and enjoy :)

 

***This soup is amazing…in fact if you are a lover of Olive Gardens Zuppa Toscana…you will LOVE this recipe!  It’s even better than theirs…I will never have a reason to go to Olive Garden again :)

Creamy Cheesy Broccoli and Cauliflower Soup for dinner tonight! YUMMY!!!


Here is my own Creamy Cheesey Broccoli and Cauliflower soup recipe I am making for dinner tonight! I thought I would share with you all!!! Let me know if you try it!!!!

Ingredients:

3 tbs butter
1 medium sized onion, finely chopped
2 cloves garlic, finely diced
3 cans chicken broth (I use my homemade chicken stock)
1 head of broccoli
1 head of cauliflower
Salt and pepper
2 cups of grated cheese
1 tbsp flour
1 1/2 cup of 2% milk or half & half
 
Directions: 
  1. Cut broccoli and cauliflower into florets and boil in chicken stock until al dente (soft but still firm), about 15 minutes. (You may need to add a little water to make sure there is enough liquid for your vegetables to cook)
  1. In a large saucepan, heat butter over a medium heat. Add onion and cook until soft and golden. Add 1 tbsp flour to butter and onion mixture make a rue. Once the rue is thick add cream to mixture slowly, while whisking mixture together.
  1. Using an electric stick blender, blend half of the broccoli/cauliflower mixture until smooth. Pour mixture into the cream mixture, along with the remainder of the whole floret mixture. (You may need to add a little more chicken stock at this time if you want a larger batch of soup)
  2. Turn soup down to a low simmer and add the cheese  and season to taste.

YUMMY Recipe for Parmigiana Roasted Veggies and Chicken

Roasted Veggies and Chicken

Ingredients

  • 3 large thighs or chicken breasts (I prefer dark meat)
  • 2 cups asparagus, cut into halves
  • 1 cup broccoli florets
  • 1 cup cauliflower, cut into bite size pieces
  • 2-3 white or red potatoes, halved (quartered if large)
  • 1/2 onion, chopped into large pieces
  • 2 tbsp olive oil
  • 2-3 cloves garlic, diced
  • Kosher Salt and pepper
  • 1 cup parmigiana cheese (optional)
(Vegetables you roast are optional, I chose veggies that are currently in season and at their lowest cost!)
Directions
  1. Toss all veggies and onion with the olive oil, salt, pepper, and garlic.
  2. Roast in 400 degree oven for about 20 minutes or until slightly crisped and browned.
  3. Place into a large serving bowl and toss with parmigiana cheese!!!
  4. For the chicken you can cook it simultaneously with veggies…just rub olive oil over chicken and then lightly salt and pepper. (I like to add a little garlic salt at this time). Place in the oven along side veggies and let roast for about 25 minutes.

Amazing Salted Fudge Recipe…YUMMY!!!

Salted Fudge

Ingredients

  • 1 1/2 cups granulated sugar
  • 2/3 cup (5 fl.-oz. can) Evaporated Milk
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon salt
  • 2 cups miniature marshmallows
  • 1 1/2 cups (9 oz.) Semi-Sweet Chocolate Morsels
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 teaspoon vanilla extract
  • 1/2 tsp sea salt

Directions

LINE 8-inch-square baking pan with foil.

COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.

STIR in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; sprinkle sea salt over the top; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.
